This traditional aged dark balsamic vinegar is from Italy. It's an old world process that crushes grapes that becomes a must. The grape liquid is cooled, stored in a container and aged. After the balsamic has aged, a fig puree is added to it. It is aged again for the flavors to blend. Fig balsamic is a think sweet balsamic that is delicious on a salad, vegetables, as a marinade for meats or a fresh cheese.
